Beans - Italian Style

250 gms beans, such as haricot, or any beans of your choice
2 cloves of crushed garlic
2 medium, finely chopped onions
1 medium, geen capsicum, cored, and thinly sliced
3 large, ripe tomatoes, roughly chopped
2 tbls cold pressed extra virgin olive oil
2 tbls fresh parsley
1 tsp dried sage
4-5 bay leaves
Black pepper, freshly ground, to taste
450 ml purified water
Salt and seasoning to taste
Combine all ingredients, except for the seasoning, in a heay saucepan.
Cover and bring to the boil on top of the stove.
Transfer to oven-proof casserole dish,
and place in pre-heated oven 180 degrees for 2 hours.
Stir in seasoning and bake uncovered for another 30 minutes.
Serve with wholegrain bread and green salad.
Serves 3-4
