Coconut Bread

Ingredients

Coconut Flour                   1/2cup
Dessicated cocontu          1/2 cup
Natural yoghurt                 1 cup
Maple Syrup                      1/4 cup
Lemon zest                        from i lemon
Ground ginger                   1 tsp
Vanilla Extract                   1/2 tsp
Eggs                                  3
Soda Bi-carb                     1 tsp
Frozen, mixed berries       1/2 cup
Salt                                    pinch
 
• Preheat oven to 175C.
• Combine the flour, coconut, zest and ginger.
• Add the eggs and mix well
• Mix in the yoghurt and Maple syrup.
• Add the salt, vanilla and bi-carb.
• Mix until combined.
• Gently fold through the berries.
• Spoon into prepared pan
• Bake for 35 minutes.
• Cover with foil and bake for another 10 mins
• Remove from the oven and allow to cool.
 
Preparation time: 15 mins
Cooking time: 45 mins
Serves: 6
