Date and Tamarind Sauce

A delicious sauce with the sweet and sour tastes of dates, raisins and tamarind. Tamarind is available from Indian groceries and supermarkets, dried or in ready to use form, called tamarind concentrate.

Dates, stoned             50g
Raisins, seedless       15g
Cummin, ground         1 tsp
Chilli powder               1 tsp
Tamarind concentrate 1 heaped tsp OR 3 tbls lemon juice
Cold water                   125 ml
Salt                               3/4 tsp, OR to taste
Soft, brown sugar         1 tsp
 
• Place all the ingredients into an electric blender and add half the water.
• Turn on the blender, and when the ingredients are half gound, add the remaining water and blend until smooth.
• Pour the sauce through a sieve and push it through, with a spoon, until a dry and coarse residual mixture is left in the sieve.
• Discard the residue abd transfer the sauce to a serving bowl.
 
Peparation time: Takes 10 mins.
Serve with all types of pakoras and fried snacks.
Suitable for freezing.
