Palak Paneer

Tender chunks of cottage cheese (vegan: tofu) in a fresh green spinach gravy. 
Fenugreek leaves
Cottage chees /Tofu (vegan)
Onion - chopped
Milk/Coconut milk (vegan)
Ghee/Ricebran oil (vegan)
Cummin seeds
Lemon Juice
Green chilli - fresh
Red chilli
Coriander leaves - fresh
Heat the oil or ghee in a pan.
Fry the cummin seeds till the flavour is released.
Add onion, and sweat till transparent.
Add tomatoes and chillis and cook till soft.
Add fenugreek leaves and spinach - to wilt.
Add tumeric, salt, milk or coconum milk.
Remove from fire and puree.
Add diced paneer or tofu. Stir.
Bring out the taste with lemon juice. 
Garnish with coriander leaves.
Serve with basmati rice or Indian flat bread.
