Pasta with Vegetable Sauce

1 tsp cold pressed extra virgin Olive oil
1 tsp rice bran oil
1 small chopped zucchini
1 samll eggplant, chopped into small cubes
1 large tomato, chopped
1 clove garlic
1/2 cup fresh parsley (and a bit to garnish with)
Salt and Cayenne pepper to taste
1/3 cup purified water
250 gms wholemeal pasta
Purified boiling water
• Place saucepan with water to boil for the pasta
• Brush fry pan with Ricebran oil
• Place the eggplnt and cook until soft (about 1-2 minutes)
• Add zucchini, tomato and garlic
• Add parsley and caynne pepper
• Stir ingredients, and add the water, simmering for about 10 minutes
• Add pasta to boiling water. Cook for approx 5-10 minutes
• Drain and wash under cold, running water to stop cooking
• Serve vegetables onto cooked wholemeal pasta 
• Drizzle with olive oil and garnish with parsley
Serves 4-6
