Scrambled Tofu

2 tsp cold pressed Corn oil
4 spring onions, chopped
1/2 tsp turmeric
250 gms tofu, mashed
2 tsp salt-free shoyu
1/2 tsp salt free vegetable seasoning
2 tsp fresh parsley, chopped
 
• Heat oil in a non-stirck fry-pan
• Add onions and turmeric
• Add remaining ingredients and stir for 5-6 minutes
• Season with freshly ground black pepper and parsley
 
Serve on wholemeal toast with grilled tomatoes and large mushroom, or as a sandwich filling.
 
Enjoy.
