Spinach Rice

1 tbs rice bran oil
1 medium onion
4 cloves garlic
1 bunch fresh spinach - finely chopped
1 cup brown rice, washed and soaked overnight
4 cups purified water
2 cloves
1 small stick of cinnamon 
4 cardamom pods
2 bay leaves
1 pinch caynne pepper
 
• Peel and chop the onions and garlic finely
• Place in a saucepan, add oil and rice
• Add water, spinach and spices
• Bring to the boil, then reduce and simmer until all water is absorbed.
 
Enjoy with stir fried veggies, dhal…whatever
 
Serves 2-3
