Teriyaki Tofu

500 gms tofu- chopped
1/2 cup wholemeal bread crumbs
1/2 cup walnuts - ground
1/4 cup water
1 cup onion - minced
1/4 cup olives - sliced
1 tsp lemon rind
1 tbs ginger - grated
1/2 cup parsley - chopped
1/2 tsp basil
1 tsp prepared mustard
2 tbs oil
2 tbs miso
 
Combine all ingredients and blend until creamy.
Pre-heat oven to 190 degrees c.
Oil 15 cm x 12 cm x 5 cm loaf pan, and smooth mixture into pan.
Cover and bake for 15 mins.
Remove cover and bake until set or slightly  browned.
Remove from oven and cool before slicing.
 
Sauce
Miso - 1 cup
Ginger root - 2 tsp. fresh, grated
Garlic - 2 cloves
Sesame oil, roasted. 1tsp
Barley malt - 1 tbs
 
Blend miso, ginger, garlic and sesame oil together.
Simmer in saucepan for 10 mins.
Add barley malt and cook 5 mins longer
Spoon over cut slices of loaf.
Enjoy.
