Tofu Loaf

500g tofu, mashed
1 large onion, finely chopped
1 stick finely sliced celery
2 cloves garlic, crushed
1 cup breadcrumbs
1 cup rolled oats
2 tbs. tahini
2 tbs salt-free tamari
1 tbs cummin powder
1 tbs coriander powder
1 cup finely pureed tomatoes, 
1/2 cup fresh, chopped parsley/coriander
Salt and pepper to taste
 
• Combine all ingrdients together
• Press into a lightly oilde baking dish
• Spread some of the tomato puree over the top of the loaf
• Sprinkle with sesame seeds
• Bake in a medium oven - 1 hour
• Stand 10 mins before serving.
 
Serve hot with vegetables, or cold with salad.
Use as a filling for sandwiches, jaffles, pies, pastries and rolls.
 
Enjoy.
