Tofu Patties

Tofu - 500g, mashed
Potatoes - 4 medium, steamed, until tender and mashed
Onion - 1 small, grated
Rice or soy milk - 2 tbs
Arrowroot powder - 1 tbs
Flat leaf parsley - 2 tbs, chopped
Black pepper - 1/2 tsp
Salt, to taste
Rice bran oil - 2 tbs
Combine tofu, potatoes, onion, arrowroot, milk, parsley, salt and pepper in a bowl.
With wet hands, roll 1/3 cup mixture into a ball, and slightly flatten.
Repeat until mixture is finished.
Place patties on baking tray, lightly brushed with oil.
Bake in moderately hot oven for 10 mins.
Turn patties over, reduce het to moderate and bake a further 20 mins, or until lightly browned. 
Makes approx 12 patties.
