Tomato and Lentil Soup

1 large onion
810 gms tomatoes, chopped
125 gms red lentil (dry weight) - soaked for 10-30 mins, then rinse and drain
2 cups purified water
Freshly ground black pepper and salt to taste
Fresh basil leaves
 
Peel and finely chop the onion.
Simmer until softened in a little water.
Add the tomatoes, lentils and water.
Season with pepper.
Bring to the boil, cover and simmer for 30 minutes until lentils are tender.
Remove from the heat, ter the basil leves into small pieces and add to the soup.
Blend until smooth.
Season with salt.
Return to the pan and heat through for a few minutes.
Serve garnished with basil leaves.
Enjoy.
 
Makes 4 cups.
